En super nem kyllingeret i ovnen, er altså dejlig når det er så godt vejr udenfor her sidst i september. Det er lidt køligt om morgenen, men når solen først kommer igennem er det faktisk så dejligt at man stadig kan sidde udenfor midt på dagen. I weekenden har jeg været på Samsø - for første, men absolut ikke sidste gang. Hold da op, det er en dejlig og smuk ø. Denne gang så vi den flotte natur, men næste gang har jeg allerede bestemt at det skal være de små fantastisk smukke huse. Og så er der jo mange spændende økologiske steder der skal besøges en gang.
Men nu var det egentlig min tirsdags-kyllinge-ret jeg kom fra, og som jeg ville skrive om. Så her kommer opskriften, som jeg lavede den.
2 kyllingebryster - jeg brugte med ben, men fileter kan også bruges.
olie
salt og peber
2 - 3 gulerødder
2 stilke blegselleri
250 gr champignon eller svampe
1 løg
1 lille dåse tomatpure
2 dl vand, mælk eller fløde
2 spsk soya
1 spsk paprika
2 hvidløg
Krydr kyllingestykkerne med salt og peber og steg dem på en pande med lidt olie. De skal kun lige tage kulør. Læg dem et ildfast fad.
Gør gulerødder, svampe/champignon, løg og blegselleri klar og skær i mindre stykker. Kom grøntsager på en pande med 2 spsk soya sammen med hvidløg i bitte små tern. Vend godt rundt indtil løgene er blevet let gennemsigtige. Kom tomatpuré, vædsken og paprika ved. Smag til med salt og peber.
Hæld sovsen over kyllingestykkerne og sæt det hele i en 200 grader varm ovn i ca. 45 min.
Server gerne med halve bagte kartofler og en god salat.
